Abstract | The fatty acid (FA) profiles of 11 spelt and 11 winter wheat samples from the 1997/98 harvest and 16 spelt and 5 winter wheat samples from the 2001/02 harvest in Belgium were investigated. In both years, the winter wheat samples consisted of European cultivars, while the spelt material included European cultivars, Belgian landraces and breeding lines. In addition to the FA profile, the lipid content of the 2001/02 material was also determined. In the 2001/02 season, spelt had significantly higher contents of free (FL), bound (BL) and total lipids (TL). In both growing seasons, linoleic, palmitic and oleic acids were the major FA and accounted for more than 90% of the total FA of both spelt and winter wheat. However, spelt had a significantly higher proportion of oleic acid than winter wheat, whereas winter wheat had higher proportions of palmitic, linoleic and alpha -linolenic acids. The average oleic acid:palmitic acid ratio was 0.57 for winter wheat and 1.06 for spelt in the 1997/98 samples and 0.54 for winter wheat and 0.97 for spelt in the 2001/02 samples. This can be used to distinguish between wholemeals of spelt and winter wheat. |
